Ingredients

Scale

For the Roasted Tomatoes

  • 45 large tomatoes, sliced into thick rounds
  • 2 tbsp olive oil
  • 1 tsp balsamic vinegar
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • Salt & pepper to taste

For Stacking

  • 8 oz fresh mozzarella, sliced
  • 12 ripe avocados, sliced (optional but delicious)
  • Fresh basil leaves

For the Drizzle

  • 1½ tbsp balsamic glaze
  • 1 tbsp olive oil

Instructions

  1. Roast the Tomatoes: Preheat your oven to 400°F (200°C). Arrange the thick tomato slices evenly on a lined baking sheet. Brush each slice with olive oil and balsamic vinegar, then sprinkle with dried oregano, garlic powder, salt, and pepper. Roast for 15–20 minutes, or until the tomatoes are softened and lightly caramelized, enhancing their natural sweetness and texture.
  2. Assemble the Towers: On a serving plate, start by placing one roasted tomato slice as the base. Add a slice of fresh mozzarella on top, followed by a fragrant fresh basil leaf. Continue layering 2–3 times depending on your preferred tower height. If using avocado slices, incorporate them between layers to add a creamy texture and richness to the stack.
  3. Finish: Drizzle the assembled towers generously with olive oil and balsamic glaze for a glossy, flavorful finish. Garnish with extra fresh basil leaves and cracked black pepper to enhance visual appeal and add a touch of spice. Serve immediately while the tomatoes are warm and the cheese slightly melty for the best taste experience.

Notes

  • Use ripe, but firm tomatoes to ensure they hold shape when roasted.
  • Avocado is optional but adds a creamy texture that complements the acidity of the tomatoes and balsamic.
  • For a vegan version, replace mozzarella with a plant-based cheese alternative.
  • Balsamic glaze can be store-bought or homemade by reducing balsamic vinegar until syrupy.
  • Serve immediately to enjoy the contrast between warm roasted tomatoes and cool fresh mozzarella and basil.
