  • 1/2 cup (100g) granulated sugar
  • 3/4 cup (100g) mixed dried fruits (raisins, currants, or sultanas)
  • 1 large egg
  • 23 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Prepare the dry mix: In a mixing bowl, sift together the flour, baking powder, spice, and salt. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and dried fruits.
  3. Combine wet ingredients: Beat the egg with milk and vanilla. Gradually add this mixture to the dry ingredients until a stiff, slightly sticky dough forms.
  4. Form the buns: Use a spoon to drop rough heaps of dough onto the baking tray, making sure they look craggy, not smooth.
  5. Bake: Bake for 15–20 minutes until the buns are golden brown. Cool on a wire rack and serve slightly warm.
