Dry Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tsp baking powder
- 1/2 tsp ground nutmeg or mixed spice (optional)
- Pinch of salt
Wet Ingredients:
- 1/2 cup (115g) cold unsalted butter, cubed
- 1/2 cup (100g) granulated sugar
- 3/4 cup (100g) mixed dried fruits (raisins, currants, or sultanas)
- 1 large egg
- 2–3 tbsp milk
- 1 tsp vanilla extract
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
- Prepare the dry mix: In a mixing bowl, sift together the flour, baking powder, spice, and salt. Rub in the butter until the mixture resembles breadcrumbs. Stir in the sugar and dried fruits.
- Combine wet ingredients: Beat the egg with milk and vanilla. Gradually add this mixture to the dry ingredients until a stiff, slightly sticky dough forms.
- Form the buns: Use a spoon to drop rough heaps of dough onto the baking tray, making sure they look craggy, not smooth.
- Bake: Bake for 15–20 minutes until the buns are golden brown. Cool on a wire rack and serve slightly warm.
