  • ½ cup (115g) cold unsalted butter, cubed
  • ½ cup (100g) granulated sugar
  • ¾ cup (100g) mixed dried fruits (raisins, currants, or sultanas)
  • 1 large egg
  • 23 tbsp milk
  • 1 tsp vanilla extract

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
  2. Prepare the dry mix: In a mixing bowl, sift together flour, baking powder, spice, and salt. Rub in the butter until the mixture resembles breadcrumbs. Stir in sugar and dried fruits.
  3. Combine wet ingredients: Beat the egg with milk and vanilla, then gradually add to the dry mixture until a stiff, slightly sticky dough forms.
  4. Shape and bake: Using a spoon, drop rough heaps of dough onto the baking tray. Bake for 15–20 minutes until golden brown.
  5. Cool and serve: Cool the rock buns on a wire rack and enjoy slightly warm.
