Dry Ingredients:
- 2 cups (250g) all-purpose flour
- 2 tsp baking powder
- ½ tsp ground nutmeg or mixed spice (optional)
- Pinch of salt
Wet Ingredients:
- ½ cup (115g) cold unsalted butter, cubed
- ½ cup (100g) granulated sugar
- ¾ cup (100g) mixed dried fruits (raisins, currants, or sultanas)
- 1 large egg
- 2–3 tbsp milk
- 1 tsp vanilla extract
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking tray with parchment paper.
- Prepare the dry mix: In a mixing bowl, sift together flour, baking powder, spice, and salt. Rub in the butter until the mixture resembles breadcrumbs. Stir in sugar and dried fruits.
- Combine wet ingredients: Beat the egg with milk and vanilla, then gradually add to the dry mixture until a stiff, slightly sticky dough forms.
- Shape and bake: Using a spoon, drop rough heaps of dough onto the baking tray. Bake for 15–20 minutes until golden brown.
- Cool and serve: Cool the rock buns on a wire rack and enjoy slightly warm.
