Ingredients

Scale

For the Baba Ganoush:

  • 2 medium eggplants
  • 2 tablespoons tahini
  • 2 tablespoons olive oil, plus extra for drizzling
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced
  • Salt and black pepper to taste
  • 1 teaspoon smoked paprika (optional)

For the Board:

  • Assorted rustic Mediterranean bread (sliced)
  • Cherry tomatoes, halved
  • Cucumber slices
  • Olives (green and black)
  • Fresh herbs (parsley, mint) for garnish
  • Optional: roasted red peppers or artichoke hearts

Instructions

  1. Roast the Eggplants: Preheat your oven to 400°F (200°C). Prick the eggplants with a fork multiple times and place them on a baking sheet. Roast for 30 to 40 minutes until the skin is charred and the flesh softens completely.
  2. Prepare Eggplant Flesh: Let the roasted eggplants cool slightly. Then, cut them open and scoop the soft flesh into a bowl, discarding the skins.
  3. Make Baba Ganoush: Mash the eggplant flesh with tahini, 2 tablespoons of olive oil, lemon juice, and minced garlic until smooth and creamy. Season with salt, black pepper, and smoked paprika if using. Adjust seasoning to taste.
  4. Arrange the Board: On a large serving board, arrange sliced rustic Mediterranean bread, halved cherry tomatoes, cucumber slices, green and black olives, and optional ingredients like roasted red peppers or artichoke hearts in an appealing manner.
  5. Serve: Spoon the prepared baba ganoush into a small bowl, drizzle with a little olive oil, and garnish with fresh parsley and mint. Place the bowl on the board and serve immediately for a vibrant, communal appetizer or light meal.
