  • ½ cup marinated artichoke hearts
  • ½ cup cherry tomatoes
  • ¼ cup roasted red peppers
  • 2 tablespoons hot honey
  • 2 tablespoons fig jam or apricot preserves
  • 2 tablespoons toasted nuts (almonds or pistachios)
  • Fresh basil or rosemary sprigs for garnish

Instructions

  1. Warm the Flatbread: Preheat your oven to 375°F (190°C). Lightly brush the flatbread wedges with olive oil and sprinkle evenly with dried oregano and sea salt. Arrange them on a baking sheet and bake for 6–8 minutes until the flatbreads are warm and slightly crisp around the edges.
  2. Prepare the Cheeses: Slice the fresh mozzarella and halloumi into even pieces. Optionally, pan-sear the halloumi slices over medium heat for 1–2 minutes on each side until they develop a golden crust. Cut the aged cheddar or manchego into cubes or thin slices. Leave the feta as a whole block or crumble it slightly for easier serving.
  3. Assemble the Board: On a large serving board, arrange the warm flatbread wedges on one side. Distribute the various cheeses evenly around the board. Place small bowls filled with kalamata olives, marinated artichokes, hot honey, and fig jam. Fill the remaining spaces on the board with cherry tomatoes, roasted red peppers, and toasted nuts. Garnish with fresh basil or rosemary sprigs to enhance the rustic Mediterranean aesthetic.
