For the Flatbread Base:
- 2–3 large flatbreads or naan
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1/2 tsp garlic powder
For the Halloumi:
- 250g halloumi cheese, sliced
- 1 tbsp olive oil
- 1 tsp lemon juice
- 1/2 tsp chili flakes (optional)
Fresh Toppings:
- Cherry tomatoes (halved)
- Cucumber (sliced)
- Red onion (thinly sliced)
- Kalamata olives
- Fresh arugula or spinach
- Fresh parsley or mint
For the Drizzle:
- 2 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp honey
- Pinch of salt and black pepper
- Prepare the Flatbread: Brush the flatbreads evenly with olive oil, then sprinkle with dried oregano and garlic powder for extra flavor. Warm them either in a pan over medium heat or in the oven until they become soft with lightly crisp edges, making them perfect as a base.
- Cook the Halloumi: Heat a skillet on medium-high heat and add olive oil. Place the halloumi slices in the skillet and grill for 2–3 minutes on each side until they develop a golden, crispy crust. Once done, finish by squeezing fresh lemon juice over them and sprinkle with chili flakes if you like some heat.
- Make the Drizzle: In a small bowl, whisk together olive oil, lemon juice, honey, salt, and black pepper until the dressing emulsifies, creating a smooth and tangy sauce to complement the flavors of the flatbread and halloumi.
- Assemble the Platter: Lay the warm flatbreads on a large serving board or platter. Arrange the grilled halloumi slices on top or alongside the flatbreads as desired.
- Add Fresh Toppings: Scatter halved cherry tomatoes, sliced cucumber, thinly sliced red onion, Kalamata olives, fresh arugula or spinach, and plenty of fresh parsley or mint over the flatbreads and halloumi to add brightness and freshness.
- Finish & Serve: Drizzle the prepared lemon-honey dressing over the entire platter. Serve immediately while the halloumi is warm and golden for the best texture and flavor experience.
