Instructions

  1. Make the Flatbread: In a bowl, whisk together flour, salt, and baking powder. Gradually add water and olive oil, mixing until a dough forms. Knead for 2–3 minutes until smooth and elastic. Divide the dough into 4 equal balls. Roll each ball out on a floured surface into a thin oval or round shape. Optionally, sprinkle the dough with sesame seeds or za’atar for extra flavor.
  2. Cook the Flatbread: Heat a dry skillet over medium-high heat. Place each rolled-out flatbread onto the skillet and cook for about 2–3 minutes on each side, or until golden brown and puffed up. Remove from heat and keep warm by wrapping in a clean kitchen towel.
  3. Prepare the Tzatziki: In a medium bowl, combine Greek yogurt, grated and drained cucumber, minced garlic, olive oil, lemon juice, chopped dill, salt, and pepper. Stir well until smooth. Cover and chill in the refrigerator for at least 15 minutes to allow flavors to meld.
  4. Assemble the Board: Arrange the warm flatbreads on a large serving board. Place the bowl of chilled tzatziki in the center. Surround it with the roasted red peppers, kalamata olives, chopped marinated artichoke hearts, halved cherry tomatoes, and crumbled feta cheese.
