For the soup:

  • 64 ounces chicken stock
  • Fresh sage, small bunch
  • 1 large head garlic

For the mayonnaise mixture:

  • 2/3 cup olive oil or vegetable oil
  • 1 large egg, separated
  • 1 teaspoon Dijon mustard
  • Pinch of salt

Instructions

  1. Prepare the soup: In a large pot, heat chicken stock and sage until simmering.
  2. Peel and halve garlic cloves, discard green centers. Boil 3–4 minutes, drain.

    Mash garlic to a paste, stir into stock. Simmer 10 more minutes.

  3. Make the mayonnaise mixture: Blend egg yolk, Dijon mustard, salt, and olive oil in a jar until creamy; add egg white if desired.
  4. Combine the soup and mixture: Strain soup for smoothness, return to pot.
  5. Add a ladle of hot soup to mayonnaise mixture, stir back in.

    Heat slowly, do not boil.

  6. Serve: Serve hot with croutons, olive oil, smoked paprika, and parsley.
