For the Savory Churro Dough (Choux):

  • 125ml water
  • 50g unsalted butter
  • 65g all-purpose flour
  • 2 large eggs
  • 40g grated Parmesan
  • ½ tsp freshly cracked black pepper
  • Pinch of salt
  • Neutral oil, for frying

For the Parmesan “Dust” Coating:

  • 30g finely grated Parmesan
  • 1 tsp garlic powder
  • ¼ tsp smoked paprika

For the Whipped Burrata Dip:

  • 1 whole burrata (about 125g)
  • 50g cream cheese
  • 1 tbsp Greek yogurt
  • Zest of ½ lemon
  • Pinch of salt and pepper

Instructions

  1. Make the choux dough: In a saucepan, heat water and butter until melted. Add flour all at once, stir vigorously until a ball forms and pulls away from the sides (1–2 mins). Cool slightly.
  2. Add flavor & eggs: Beat in eggs one at a time until smooth and glossy. Stir in Parmesan, pepper, and salt.
  3. Pipe & fry: Heat oil to 180°C (350°F). Pipe dough into hot oil using a piping bag with star tip (10–12 cm lengths). Fry until golden and crisp. Drain on paper towels.
  4. Dust the churros: Mix Parmesan, garlic powder, and paprika. Roll warm churros in the mixture.
  5. Make whipped burrata: Blend burrata, cream cheese, yogurt, lemon zest, salt, and pepper until airy and smooth. Chill briefly.
  6. Serve immediately: With dip on the side or in a central bowl for sharing.
