Base Brittle

  • ¾ cup mashed sweet potato (roasted and cooled)
  • 1 cup sugar
  • ¼ cup water
  • 2 tbsp light corn syrup or golden syrup
  • 1½ tbsp unsalted butter
  • Pinch of sea salt

Flavor & Crunch

  • ½ tsp baking soda
  • 1½ tsp finely chopped fresh sage
  • ⅓ cup toasted pepitas (pumpkin seeds)

Optional Garnish

  • Extra flaky salt
  • Fried sage leaves for serving

Instructions

  1. Prep Sheet: Line a baking sheet with parchment paper or a silicone mat. Lightly grease it.
  2. Cook Brittle Base: In a saucepan over medium heat, combine mashed sweet potato, sugar, water, syrup, butter, and salt. Stir constantly until sugar dissolves, then increase heat and cook until mixture reaches 150°C (300°F), the hard crack stage (use a candy thermometer).
  3. Add Flavor: Remove from heat. Quickly stir in baking soda, chopped sage, and toasted pepitas. Mixture will bubble and lighten.
  4. Spread It Out: Immediately pour onto the prepared baking sheet. Use a spatula to spread it thin and even.
  5. Cool & Break: Let cool completely until set and glassy, then break into shards.
  6. Optional Garnish: Sprinkle with extra flaky salt or top with fried sage leaves just before serving.
