  • 200g (about 7 oz) cooked lobster meat, chopped

Sauce

  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • ½ cup heavy cream
  • ¼ cup seafood or chicken stock
  • 1 tsp lemon juice
  • ¼ tsp paprika (optional)
  • Salt & black pepper to taste

  • Fresh parsley, chopped

Instructions

  1. Sear the Scallops: Pat the scallops dry with a paper towel to remove any excess moisture. Season both sides evenly with salt and black pepper. Heat a skillet over medium-high heat and melt a bit of butter. Place the scallops in the skillet and sear them without moving for about 2–3 minutes on one side until they develop a golden-brown crust. Flip and sear the other side for another 2–3 minutes until cooked through. Remove scallops from the pan and set aside.
  2. Make the Sauce: Using the same skillet, add the remaining butter and minced garlic. Sauté the garlic for about 30 seconds until fragrant but not browned. Pour in the seafood or chicken stock, heavy cream, lemon juice, and paprika if using. Stir well and let the sauce simmer gently for 2–3 minutes until it slightly thickens and flavors meld together.
  3. Add Lobster: Stir the chopped cooked lobster meat into the cream sauce. Allow it to heat through gently over low heat for 1–2 minutes, making sure the lobster is warmed without overcooking.
  4. Combine & Serve: Return the seared scallops to the skillet with the sauce just to warm them up slightly. Plate the scallops and lobster cream sauce together, then garnish generously with freshly chopped parsley. Serve immediately while hot for the best flavor and texture.

  • Patting the scallops dry is crucial to achieving a good sear and browning.
  • Use fresh or properly thawed scallops for best results.
