Ingredients

Scale

Shrimp and Pasta

  • 200g shrimp, peeled and deveined
  • 200g fettuccine or pasta of your choice
  • 1 tsp olive oil
  • Salt and pepper, to taste

Alfredo Sauce

  • 2 tbsp butter
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese

Add-ins and Garnish

  • 1 cup fresh spinach
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cook the Pasta: Cook the pasta according to the package instructions until al dente. Drain the pasta, reserving a small amount of the pasta cooking water, and set aside.
  2. Cook the Shrimp: Heat olive oil in a large skillet over medium heat. Add the shrimp, season with salt and pepper, and cook for 2 to 3 minutes on each side until the shrimp turn pink and are cooked through. Remove the shrimp from the skillet and set aside.
  3. Make the Alfredo Sauce: In the same skillet, melt the butter over medium heat. Add the minced garlic and sauté for about 30 seconds until fragrant. Stir in the heavy cream and bring it to a gentle simmer. Gradually add the grated Parmesan cheese, stirring continuously until the sauce is smooth and creamy. Season the sauce with salt and pepper to taste.
  4. Combine: Add the cooked pasta to the Alfredo sauce and toss to coat the noodles evenly. Add the fresh spinach and cooked shrimp, tossing gently until the spinach wilts slightly and everything is well combined and coated with sauce.
  5. Serve: Serve the Shrimp Alfredo immediately, garnished with chopped fresh parsley and additional Parmesan cheese if desired for extra flavor.

Notes

  • Use fresh shrimp for the best flavor, but frozen shrimp can work if thawed properly.
  • Reserve some pasta water to thin the sauce if it becomes too thick.
  • You can substitute heavy cream with half-and-half for a lighter sauce, though it will be less rich.
  • If you prefer, spinach can be replaced with kale or arugula for a different leafy green.
  • For a gluten-free version, use gluten-free pasta instead of traditional fettuccine.
  • Grate fresh Parmesan cheese for the best taste and melting consistency.
