Pasta
- 8 oz (225g) angel hair pasta
Shrimp
- 1 lb (450g) large shrimp, peeled and deveined
Sauce
- 3 tablespoons butter
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- ½ teaspoon red pepper flakes (optional)
- ¼ cup dry white wine or chicken broth
- Juice of 1 lemon
- Zest of 1 lemon
- Salt and pepper, to taste

- Cook the Pasta: Bring a large pot of salted water to a boil and cook angel hair pasta according to package instructions until al dente. Drain and set aside, reserving ½ cup of the pasta cooking water for later use.
- Cook the Shrimp: In a large skillet, heat olive oil and 1 tablespoon of butter over medium-high heat. Add the shrimp and cook for 1 to 2 minutes on each side until they turn pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the Scampi Sauce: Using the same skillet, add the remaining 2 tablespoons of butter and the minced garlic. Sauté for about 30 seconds until fragrant, being careful not to burn the garlic. Add the optional red pepper flakes and pour in the white wine or chicken broth. Let the sauce simmer for 2 to 3 minutes until it slightly reduces. Stir in the lemon juice and lemon zest.
- Combine Pasta and Shrimp: Return the cooked shrimp to the skillet and add the drained pasta. Toss everything together to coat the pasta evenly in the scampi sauce. If the sauce is too thick, use the reserved pasta water a little at a time to loosen it. Season with salt and pepper to taste.
- Serve: Transfer the pasta and shrimp to serving plates. Garnish with chopped fresh parsley and sprinkle with grated Parmesan cheese if desired. Serve immediately with lemon wedges on the side for added brightness.
