Shrimp and Sauce
- 1 lb (450 g) large shrimp, peeled and deveined
- 3 tbsp unsalted butter
- 2 tbsp olive oil
- 4 cloves garlic, minced
- 1/4 tsp red pepper flakes (optional)
- Juice and zest of 1 lemon
- 1/4 cup dry white wine or chicken broth
- Salt and black pepper, to taste
- 2 tbsp fresh parsley, chopped
Pasta
- 8 oz (225 g) angel hair pasta
Garnish
- Grated Parmesan cheese, for serving (optional)
- Cook the pasta: Bring a large pot of salted water to a boil. Cook the angel hair pasta according to the package instructions until al dente. Drain the pasta and set aside, reserving 1/2 cup of the pasta cooking water for later use.
- Cook the shrimp: In a large skillet, heat the unsalted butter and olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant and lightly golden. Add the shrimp to the skillet, season with salt and black pepper, then cook the shrimp for 2 to 3 minutes per side until they are pink and opaque. Remove the shrimp from the skillet and set aside.
- Make the sauce: In the same skillet, add the lemon juice, lemon zest, and white wine (or chicken broth). Allow the mixture to simmer for 1 to 2 minutes until it slightly reduces and thickens.
- Combine pasta and shrimp: Return the cooked shrimp to the skillet and toss them in the sauce. Add the cooked angel hair pasta and a splash of the reserved pasta water if needed to help loosen and coat the pasta evenly with the sauce. Mix well to combine all the flavors.
- Serve: Garnish the shrimp scampi pasta with freshly chopped parsley and sprinkle with grated Parmesan cheese if desired. Serve immediately while hot for the best taste and texture.
Notes
- Use fresh shrimp for the best flavor, but frozen shrimp can be used if thawed properly.
- The red pepper flakes are optional; omit them if you prefer a milder dish.
- You can substitute chicken broth for the white wine to keep the dish non-alcoholic.
- Reserve pasta water is key for loosening the sauce and helping it coat the pasta perfectly.
- Angel hair pasta cooks very quickly, so keep an eye on cooking time to avoid overcooking.
- For a gluten-free version, substitute angel hair pasta with gluten-free pasta of your choice.
