Potatoes

  • 1 lb (450g) baby potatoes
  • 2 tbsp olive oil
  • Salt & black pepper, to taste

  • 1/2 cup crumbled feta cheese

Garlic Butter Drizzle

  • 2 tbsp unsalted butter
  • 2 garlic cloves, minced
  • 1 tsp fresh thyme leaves (or 1/2 tsp dried)

Garnish (Optional)

  • Chopped parsley

Instructions

  1. Boil potatoes: Place the baby potatoes in a pot of salted water and bring to a boil. Cook for 15–20 minutes, or until they are fork-tender. Drain the potatoes and let them cool slightly for easier handling.
  2. Preheat oven: While the potatoes cool, preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper to prevent sticking and for easy cleanup.
  3. Smash potatoes: Using the bottom of a glass or a spatula, gently press each potato to flatten it slightly. Arrange the smashed potatoes evenly on the prepared baking sheet.
  4. Season & bake: Drizzle the olive oil generously over the potatoes, then sprinkle with salt and black pepper to taste. Bake in the preheated oven for 20–25 minutes, or until the potatoes develop a golden and crispy crust around the edges.
  5. Add feta: Remove the baking sheet from the oven and evenly sprinkle the crumbled feta cheese over the crispy potatoes. Return to the oven and bake for an additional 3–5 minutes, just until the feta begins to melt slightly.
  6. Make garlic butter drizzle: While the potatoes finish baking, melt the unsalted butter in a small skillet over medium heat. Add the minced garlic and thyme leaves, cooking for 1–2 minutes until fragrant and the garlic is softened but not browned.
  7. Finish & serve: Remove the potatoes from the oven and drizzle the warm garlic butter evenly over them. Garnish with chopped parsley if using, and serve immediately while hot and crispy.

  • Baby potatoes can be replaced with small Yukon Gold or red potatoes for similar results.
