Cookie Dough:

  • 1 cup unsalted butter (softened, 2 sticks)
  • 1 cup peanut butter (smooth or chunky)
  • 1 cup brown sugar, packed
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 3½ cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt

Filling:

  • 48 mini Snickers bars, unwrapped

Instructions

  1. Preheat Oven: Heat oven to 350°F (175°C) and line cookie sheets with parchment paper.
  2. Mix Wet Ingredients: In a mixing bowl, beat together butter, peanut butter, brown sugar, and white sugar until fluffy.
  3. Add Eggs and Vanilla: Add eggs one at a time, then stir in vanilla.
  4. Combine Dry Ingredients: In a separate bowl, mix flour, baking soda, and salt. Gradually add to wet mixture and mix until dough forms.
  5. Assemble Cookies: Scoop a tablespoon of dough, flatten it, place a mini Snickers inside, and seal the dough around it. Shape into a smooth ball and place 2 inches apart on baking sheets.
  6. Bake: Bake for 10–12 minutes, until lightly golden at the edges.
  7. Cool: Let cookies rest for 5 minutes before transferring to wire racks.
