Ingredients

Scale

Fish and Marinade

  • 2 whole trout, cleaned and gutted
  • 2 tablespoons olive oil
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust for heat)
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • Juice of 1 lemon

Stuffing and Serving

  • Fresh herbs (such as parsley, thyme, or dill) for stuffing
  • Lemon wedges, for serving

Instructions

  1. Prepare the Trout: Rinse the trout under cold water and pat dry thoroughly with paper towels. Rub olive oil inside and outside the fish to help the seasoning stick. Evenly sprinkle smoked paprika, cayenne pepper, garlic powder, salt, and black pepper over both sides and inside the cavity. Stuff the cavity with fresh herbs and squeeze lemon juice inside to infuse flavor.
  2. Preheat the Grill: Heat an outdoor grill or use a grill pan over medium-high heat. Lightly oil the grill grates to prevent the fish from sticking during cooking.
  3. Grill the Trout: Place the prepared trout directly on the grill. Cook for about 4 to 5 minutes per side, depending on the size of the fish, until the flesh turns opaque and easily flakes with a fork. Flip the trout gently with a spatula or tongs to keep it intact.
  4. Serve: Transfer the grilled trout to a serving platter. Garnish with additional fresh herbs and lemon wedges. This dish pairs wonderfully with grilled vegetables, steamed rice, or a crisp green salad.

Notes

  • Adjust cayenne pepper quantity to control spice level.
  • Ensure the grill is well-oiled to avoid sticking and breaking the fish.
  • Use fresh herbs like dill or thyme for best aroma and flavor.
  • If you don’t have a grill, you can cook the trout in a grill pan or bake it in the oven at 400°F (205°C) for 15-20 minutes.
  • Make sure the trout is fresh and properly cleaned for optimal taste and safety.
