For the Trout

  • 2 whole trout, cleaned and gutted

For the Marinade

  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1 tsp smoked paprika
  • ½ tsp cayenne pepper (adjust to heat preference)
  • 1 tsp chili powder
  • Zest and juice of 1 lemon
  • Salt & black pepper, to taste

For Garnish

  • Fresh parsley or cilantro, chopped
  • Lemon wedges (optional, for serving)

Instructions

  1. Prepare Marinade: In a small bowl, combine olive oil, minced garlic, smoked paprika, cayenne pepper, chili powder, lemon zest and juice, salt, and black pepper. Mix thoroughly to form an even marinade.
  2. Marinate Trout: Rub the marinade generously inside the cavity and all over the outside of each cleaned and gutted trout. Let the trout sit at room temperature for 15–30 minutes to absorb the flavors.
  3. Preheat Grill: Heat your grill to medium-high heat. Once hot, oil the grill grates well to prevent the fish from sticking during cooking.
  4. Grill Trout: Place the trout directly on the grill. Cook for 4–5 minutes on each side or until the fish flakes easily when tested with a fork. Be careful when flipping to keep the fish intact.
  5. Serve: Remove the grilled trout carefully from the grill. Garnish with freshly chopped parsley or cilantro. Serve immediately with lemon wedges on the side for an extra zing.
