For the Beef:
- 1 lb (450g) beef flank steak or sirloin, thinly sliced
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon smoked paprika
- 1/2 teaspoon cumin
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
For the Pineapple Salsa:
- 1 cup fresh pineapple, diced
- 1/4 red onion, finely chopped
- 1 jalapeño, seeded and chopped (optional)
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Pinch of salt
For Serving:
- Warm tortillas
- Shredded lettuce or cabbage
- Sour cream or lime crema (optional)
- Extra cilantro
- Prepare the beef marinade: In a bowl, combine olive oil, minced garlic, chili powder, smoked paprika, cumin, red pepper flakes (if using), salt, and black pepper. Add the thinly sliced beef and toss everything together to coat the beef evenly. Cover and marinate for at least 20 to 30 minutes to infuse the flavors.
- Make the pineapple salsa: In a separate bowl, combine diced fresh pineapple, finely chopped red onion, seeded and chopped jalapeño if desired, chopped fresh cilantro, lime juice, and a pinch of salt. Mix well to combine and set aside to let the flavors meld.
- Cook the beef: Heat a skillet over medium-high heat. Add the marinated beef slices and cook for 4 to 6 minutes, stirring occasionally, until the beef is browned and cooked through. Remove from heat.
- Warm the tortillas: Warm the tortillas in a dry pan or directly over a low flame for a few seconds on each side until soft and pliable.
- Assemble the tacos: Place a portion of cooked beef onto each warm tortilla. Top with pineapple salsa, shredded lettuce or cabbage, and optionally add a dollop of sour cream or lime crema. Garnish with extra cilantro.
- Serve: Serve the tacos warm with extra lime wedges and cilantro on the side for added brightness and flavor.
Notes
- For added heat, keep the seeds in the jalapeño in the salsa or add extra red pepper flakes to the beef marinade.
- Flank steak is preferred for its tenderness and flavor but sirloin works well too.
- Use fresh pineapple for the best taste; canned pineapple will alter the texture and sweetness.
- If gluten is a concern, choose corn tortillas to keep these tacos gluten-free.
- These tacos can be made ahead by preparing the beef and salsa separately and assembling just before serving.
