For the crust:

  • 2 cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup sugar

For the filling:

  • 900 g (about 4 cups) cream cheese, softened
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ¼ cup all-purpose flour

For the topping:

  • 1 cup strawberry preserves or glaze
  • Fresh strawberries, halved

For decoration (optional):

  • Whipped cream

Instructions

  1. Make the crust – Preheat oven to 175°C (350°F). Mix graham cracker crumbs, melted butter, and sugar until combined. Press mixture into the bottom and slightly up the sides of a 9-inch springform pan. Bake for 10 minutes, then let cool.
  2. Prepare the filling – In a large bowl, beat the cream cheese until smooth. Add sugar and vanilla, mix well. Add eggs one at a time, mixing just until combined. Mix in sour cream and flour until smooth.
  3. Bake – Pour filling over the cooled crust. Bake for 50–60 minutes, or until the center is set but slightly jiggly. Turn off oven, crack the door, and let cheesecake cool inside for 1 hour (prevents cracking). Refrigerate at least 4 hours or overnight.
  4. Add topping – Spread strawberry preserves/glaze evenly on top. Decorate with fresh strawberries. Pipe whipped cream around the edges if desired.

Notes

  • For extra creaminess, make sure all ingredients are at room temperature.
  • Use a water bath (place cheesecake pan inside a larger pan filled with hot water) for a smooth, crack-free finish.
