Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (165°C). In a mixing bowl, combine 1 ½ cups golden sandwich cookie crumbs with 5 tablespoons of melted butter. Press the mixture firmly into the bottom of a greased 9-inch springform pan to form an even crust layer.
  2. Make the Cheesecake Filling: In a large bowl, beat 16 ounces of softened cream cheese with ¾ cup sugar until smooth and creamy. Add ½ cup strawberry purée, 2 large eggs one at a time, 1 teaspoon vanilla extract, and ¼ cup sour cream. Mix until fully combined and smooth.
