For the Crust:

  • 1½ cups Golden Oreos (crushed)
  • ¼ cup unsalted butter, melted

For the Cheesecake Filling:

  • 16 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ½ cup sour cream
  • ½ cup strawberry preserves or puree

For the Strawberry Crunch Topping:

  • 10 Golden Oreos
  • 10 freeze-dried strawberries (or 1 packet strawberry gelatin powder)
  • 2 tbsp unsalted butter, melted

Instructions

  1. Make the Crust: Preheat oven to 325°F (160°C). Mix crushed Golden Oreos and melted butter. Press into a lined 9×9” pan. Bake for 8 minutes, then set aside to cool.
  2. Prepare the Cheesecake: Beat cream cheese until smooth. Add sugar, then eggs one at a time. Mix in vanilla and sour cream. Pour half the mixture onto the crust. Dollop strawberry preserves and swirl lightly. Add remaining cheesecake batter and smooth the top. Bake for 35–40 minutes until set. Cool completely, then chill in the fridge for at least 4 hours.
  3. Make the Crunch Topping: Pulse Golden Oreos and freeze-dried strawberries in a food processor. Stir in melted butter until crumbly. Sprinkle generously over the chilled cheesecake and press lightly to adhere.
