  • 1 box strawberry cake mix (plus ingredients listed on the box: eggs, oil, water)
  • 1 ½ cups fresh strawberries, chopped

For the Cream Cheese Swirl:

  • 8 oz cream cheese, softened
  • ½ cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 cup sweetened shredded coconut
  • 1 cup chopped pecans or walnuts (optional)

Instructions

  1. Prep the Pan: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish. Sprinkle coconut and nuts evenly on the bottom.
  2. Prepare the Cake Batter: Make strawberry cake mix according to package directions. Fold in chopped strawberries, then pour batter over coconut and nuts.
  3. Add Cream Cheese Mixture: Beat cream cheese, butter, and powdered sugar until smooth. Drop spoonfuls over cake batter (don’t spread—it will swirl on its own as it bakes).
  4. Bake: Bake 40–45 minutes until the cake is golden, cracked, and the filling stays gooey.
