Ingredients

Scale

For the Red Velvet Cake Layers:

  • 2 ½ cups all-purpose flour
  • 1 ½ cups granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon cocoa powder
  • 1 ½ cups vegetable oil
  • 1 cup buttermilk, room temperature
  • 2 large eggs
  • 2 tablespoons red food coloring
  • 1 teaspoon white vinegar
  • 1 teaspoon vanilla extract

For the Strawberry Filling:

  • 2 cups fresh strawberries, hulled and chopped
  • 2 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Cream Cheese Frosting:

  • 16 oz (450 g) cream cheese, softened
  • ½ cup (1 stick) unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract

For Garnish (Optional):

  • Fresh strawberries, halved
  • Red velvet cake crumbs

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans, or line them with parchment paper to prevent sticking.
  2. Mix Dry Ingredients: In a large bowl, whisk together all-purpose flour, granulated sugar, baking soda, salt, and cocoa powder to create a uniform dry mix.
  3. Combine Wet Ingredients: In a separate bowl, whisk together vegetable oil, room temperature buttermilk, eggs, red food coloring, white vinegar, and vanilla extract until the mixture is smooth and evenly colored.
  4. Combine and Bake: Slowly add the dry ingredients to the wet ingredients, mixing gently until just combined to avoid overmixing. Divide the batter evenly between the two prepared pans. Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  5. Prepare the Strawberry Filling: In a small saucepan over medium heat, combine chopped strawberries, granulated sugar, and lemon juice. Cook until the strawberries release their juices and the mixture begins to simmer. Stir in the cornstarch and water mixture and cook for 1 to 2 minutes until thickened. Remove from heat and allow the filling to cool completely.
  6. Make the Cream Cheese Frosting: Using an electric mixer, beat the softened cream cheese and butter together until creamy and smooth. Gradually add powdered sugar, one cup at a time, mixing until well combined and fluffy. Finally, beat in vanilla extract for added flavor.
  7. Assemble the Cake: Place one cooled cake layer on a serving plate. Spread a generous layer of cream cheese frosting evenly over the top, followed by a layer of chilled strawberry filling, taking care to avoid the edges. Place the second cake layer on top and cover the entire cake with the remaining cream cheese frosting, smoothing with a spatula.
  8. Decorate: Garnish the cake with halved fresh strawberries and a sprinkling of red velvet cake crumbs to enhance its visual appeal and flavor.
  9. Chill and Serve: Refrigerate the assembled cake for at least 1 hour to allow the layers to set for neat slicing. Serve chilled and enjoy the delightful balance of flavors.

Notes

  • Ensure all ingredients are at room temperature for best results.
  • Do not overmix the batter to keep the cake tender and moist.
  • If fresh strawberries are out of season, frozen strawberries can be used for the filling but thaw and drain excess liquid before cooking.
  • The cake can be stored in the refrigerator for up to 3 days covered tightly.
  • Allow the cake to sit at room temperature for 10-15 minutes before serving for the best flavor.
