A delightful and visually appealing Strawberry Shortcake Trifle that layers moist pound cake, macerated fresh strawberries, and fluffy whipped cream, perfect for parties or a refreshing dessert.

Ingredients

Scale

Cake Layer

  • 1 pound cake or sponge cake (store-bought or homemade), cut into cubes

Cream Layer

  • 2 cups heavy whipping cream
  • ¼ cup powdered sugar
  • 1 tsp vanilla extract

Strawberry Layer

  • 2 cups fresh strawberries, hulled and sliced
  • 2 tbsp granulated sugar
  • 1 tsp lemon juice

Instructions

  1. Prepare the strawberries: In a bowl, combine sliced strawberries, sugar, and lemon juice. Toss well and let sit for 10–15 minutes to release the juices, enhancing their flavor and sweetness.
  2. Whip the cream: In a chilled bowl, beat the heavy whipping cream together with powdered sugar and vanilla extract until soft peaks form. This gives the cream a light, fluffy texture perfect for layering.
  3. Assemble the trifles: In small glasses or jars, begin by placing a layer of cake cubes at the bottom. Spoon some of the macerated strawberries, including a bit of their juice, over the cake layer. Add a generous layer of whipped cream on top. Repeat these layers until the glass is filled, finishing off with a final layer of whipped cream on top.
  4. Garnish & serve: Decorate each trifle with a whole strawberry or some crumbled shortbread cookies for extra texture and crunch. Serve immediately for the freshest taste, or refrigerate for up to 4 hours to allow flavors to meld before serving.

Notes

  • For a lighter option, substitute heavy cream with whipped coconut cream to make it dairy-free and vegan-friendly.
  • Shortcakes can be replaced with angel food cake or sponge cake for a different texture.
  • Macerating strawberries enhances their natural sweetness and creates a flavorful juice that prevents the dessert from being dry.
  • Consume within 4 hours if refrigerated to maintain the texture of the whipped cream and cake.
  • Adding a splash of liqueur like Grand Marnier to strawberries can add a sophisticated flavor twist.
