Ingredients

Scale

Chicken

  • 4 boneless, skinless chicken breasts

Stuffing

  • 4 oz goat cheese, crumbled
  • 1 cup fresh spinach, chopped
  • ¼ cup dried cranberries

Seasoning & Cooking

  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried thyme
  • ½ teaspoon paprika
  • Salt and black pepper to taste
  • Toothpicks or kitchen twine for securing

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) to ensure it’s ready for baking the stuffed chicken breasts.
  2. Prepare Chicken: Butterfly each chicken breast by slicing horizontally through the middle without cutting all the way through, creating a pocket for the stuffing.
  3. Make Stuffing: In a small bowl, combine the chopped fresh spinach, dried cranberries, and crumbled goat cheese, mixing well to evenly distribute the ingredients.
  4. Stuff Chicken: Carefully fill each butterflied chicken breast with the spinach, cranberry, and goat cheese mixture. Secure the opening with toothpicks or kitchen twine to keep the stuffing inside during cooking.
  5. Season Chicken: Rub the outside of each stuffed chicken breast with olive oil, then evenly sprinkle garlic powder, dried thyme, paprika, salt, and black pepper to enhance flavor.
  6. Bake: Place the stuffed chicken breasts in a baking dish and bake in the preheated oven for 25–30 minutes, or until the chicken is fully cooked and juices run clear.
  7. Serve: Remove the chicken from the oven, take out the toothpicks or twine, slice if desired, and serve warm immediately.

Notes

  • Butterflying the chicken ensures even cooking and makes it easier to stuff.
  • Be careful not to overfill to prevent stuffing from spilling out during baking.
  • Use fresh spinach for best texture, but frozen spinach (thawed and well-drained) can be substituted.
  • Ensure chicken reaches an internal temperature of 165°F (74°C) for safe consumption.
  • Leftovers can be refrigerated for up to 2 days and reheated gently.
