  • ½ cup goat cheese, softened
  • 1 tbsp honey
  • 1 tsp lemon zest
  • 1 garlic clove, minced

  • 2 tbsp honey
  • 2 tbsp cranberry juice
  • ½ tsp mustard (optional)

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to ensure it’s ready for baking the chicken later.
  2. Prepare Stuffing: In a medium bowl, combine the goat cheese, chopped spinach, dried cranberries, honey, lemon zest, and minced garlic. Mix well until all ingredients are evenly incorporated.
  3. Create Chicken Pockets: Carefully slice a pocket horizontally into each chicken breast without cutting all the way through, creating space for the stuffing.
  4. Stuff Chicken: Generously fill each chicken breast pocket with the prepared cranberry-spinach-goat cheese mixture, distributing it evenly among the four breasts.
  5. Season Chicken: Rub the outside of each stuffed chicken breast with olive oil, then evenly sprinkle paprika, garlic powder, salt, and black pepper for flavorful seasoning.
  6. Sear Chicken: Heat a skillet over medium-high heat and sear the chicken breasts for 2–3 minutes on each side until they develop a golden brown color, helping to lock in juices.
