Ingredients

Scale

Shrimp

  • 1 lb (450 g) large shrimp, peeled and deveined
  • Salt and pepper, to taste

Sauce & Cooking

  • 2 tbsp vegetable oil
  • 3 cloves garlic, minced
  • 1/4 cup sweet chili sauce
  • 1 tbsp soy sauce
  • 1 tsp rice vinegar or lime juice
  • 1/4 tsp red pepper flakes (optional, for extra heat)

Garnish & Serving

  • 2 green onions, sliced, for garnish
  • Sesame seeds, for garnish (optional)
  • Cooked rice or noodles, for serving

Instructions

  1. Prepare the shrimp: Pat the shrimp dry with paper towels and season lightly with salt and pepper to enhance their natural flavor.
  2. Cook the shrimp: Heat vegetable oil in a large skillet or wok over medium-high heat. Add the shrimp and cook for 2 to 3 minutes on each side until they turn pink and opaque. Remove shrimp from the skillet and set aside to prevent overcooking.
  3. Make the sauce: In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant, taking care not to burn it. Stir in the sweet chili sauce, soy sauce, rice vinegar (or lime juice), and red pepper flakes if using. Cook the sauce for 1 to 2 minutes until heated through and well combined.
  4. Combine shrimp and sauce: Return the cooked shrimp to the skillet and toss well to coat evenly with the sweet chili garlic sauce, allowing flavors to meld together for a minute.
  5. Serve: Serve the shrimp immediately over cooked rice or noodles. Garnish with sliced green onions and sesame seeds if desired for added flavor and presentation.

Notes

  • For extra heat, increase the amount of red pepper flakes or add fresh chili slices.
