Shrimp
- 1 lb (450 g) shrimp, peeled and deveined
Sauce and Garnish
- 2 tablespoons vegetable or sesame oil
- 4 cloves garlic, minced
- ¼ cup sweet chili sauce
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar or lime juice
- ½ teaspoon crushed red pepper flakes (optional, for extra heat)
- 2 green onions, sliced, for garnish
- Sesame seeds, for garnish
To Serve
- Prepare the shrimp: Pat shrimp dry with paper towels. This helps the shrimp sear properly and not steam during cooking. Set aside.
- Cook the shrimp: Heat oil in a large skillet or wok over medium-high heat. Add shrimp and cook 2–3 minutes per side until they turn pink and opaque, indicating they are fully cooked. Remove shrimp from the pan and set aside to avoid overcooking.
- Make the sauce: In the same pan, add minced garlic and sauté for about 30 seconds until fragrant but not browned. Add sweet chili sauce, soy sauce, and rice vinegar or lime juice. Stir well and cook for 1–2 minutes until the sauce is slightly thickened and well combined.
- Combine shrimp and sauce: Return the cooked shrimp to the pan with the sauce. Toss to coat the shrimp evenly, allowing the flavors to meld together. Cook for an additional 1–2 minutes until the shrimp are heated through and well glazed with sauce.
- Serve: Plate the shrimp over cooked rice or noodles. Garnish with sliced green onions and a sprinkle of sesame seeds for added texture and flavor. Serve immediately while hot and enjoy!
Notes
- For extra heat, add the optional crushed red pepper flakes when cooking the garlic.
- Shrimp cooks quickly; avoid overcooking to keep them tender and juicy.
- You can substitute rice vinegar with lime juice for a fresh citrus twist.
- Serve with steamed vegetables for a complete meal.
- Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
