Ingredients

Scale

Sweet Potato Crostini

  • 2 large sweet potatoes, sliced into ½-inch rounds (skin on)
  • 2 tbsp olive oil
  • ½ tsp cinnamon
  • ½ tsp paprika
  • Salt & pepper to taste

Cranberry Whipped Feta

  • ½ cup feta cheese
  • ¼ cup cream cheese (softened)
  • 2 tbsp cranberry sauce (or 1 tbsp cranberry jam)
  • 1 tsp honey

Toppings

  • 1 apple (Honeycrisp or Fuji recommended), diced or thinly sliced
  • 2 tbsp dried cranberries or fresh pomegranate seeds
  • 2 tbsp walnuts, chopped
  • Honey drizzle, for serving
  • Fresh thyme leaves (optional for garnish)

Instructions

  1. Roast Sweet Potato Rounds: Preheat the oven to 425°F (220°C). Arrange the sweet potato slices on a baking sheet, brush them evenly with olive oil, then sprinkle with cinnamon, paprika, salt, and pepper. Roast for 22–25 minutes, flipping the slices halfway through, until they are lightly caramelized and have crisp edges.
  2. Make Cranberry Whipped Feta: In a food processor, blend together feta cheese, softened cream cheese, cranberry sauce, and honey until smooth and fluffy, creating a creamy spread with a balance of tangy and sweet flavors.
  3. Assemble Crostini: Spread a generous spoonful of the cranberry whipped feta on each roasted sweet potato round. Top each one with diced or thinly sliced apple, followed by chopped walnuts and either dried cranberries or fresh pomegranate seeds for added texture and flavor.
  4. Finish & Serve: Drizzle each crostini lightly with honey and garnish with fresh thyme leaves if desired. Serve warm or at room temperature as a flavorful and elegant appetizer.

Notes

  • Sweet potatoes can be roasted a day ahead; reheat before assembling.
  • Use fresh pomegranate seeds for a burst of juiciness instead of dried cranberries.
  • This recipe is vegetarian but contains dairy; substitute plant-based cream cheese and feta for a vegan version.
  • Adjust cinnamon and paprika to taste for desired spice level.
  • For easier slicing, chill sweet potatoes slightly before cutting.
