  • 2 tbsp pomegranate seeds
  • 1 tsp fresh thyme leaves
  • Optional: drizzle of honey for extra sweetness

Instructions

  1. Preheat Oven: Preheat your oven to 200°C (400°F) to ensure an ideal roasting temperature for the sweet potatoes.
  2. Prepare Sweet Potatoes: Toss the peeled and sliced sweet potato rounds with olive oil, salt, and black pepper to coat them evenly.
  3. Roast Sweet Potatoes: Arrange the sweet potato slices on a baking sheet in a single layer and roast in the oven for 20–25 minutes until golden, tender, and slightly caramelized.
  4. Cool Slightly: Remove the roasted sweet potatoes from the oven and let them cool for a few minutes so the stacks hold better.
  5. Assemble Stacks: On a serving plate, layer 2–3 slices of roasted sweet potatoes to form small stacks.
  6. Add Burrata: Tear the burrata gently into pieces and spoon it over each of the sweet potato stacks, letting the creamy cheese melt slightly from the warm base.
  7. Drizzle Toppings: Drizzle the balsamic glaze over each stack and add honey if you prefer an extra touch of sweetness.
