Instructions

  1. Preheat oven: Preheat your oven to 200°C (400°F) and lightly grease a baking dish to prevent sticking.
  2. Prepare the vegetables: In a large bowl, toss together the sliced beets, sweet potatoes, and red onion with olive oil, salt, black pepper, and your choice of dried thyme or oregano until all slices are well coated with the seasoning.
  3. Assemble the gratin: Arrange the vegetables in the greased dish, layering them by alternating beets, sweet potatoes, and onions. Between each layer, sprinkle minced garlic and crumbled feta cheese evenly. Continue layering until all ingredients are used, finishing with a vegetable layer on top.
