For the Sweet Potato Hummus:

  • 2 medium sweet potatoes, roasted and mashed
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 2 tbsp tahini
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 2 cloves garlic
  • 1 tsp cumin
  • ½ tsp paprika
  • Salt to taste
  • 24 tbsp water (for blending)

For the Platter Base:

  • 2 cups pita bread, cut into wedges
  • 1 cup assorted crackers

For the Toppings & Add-ons:

  • ½ cup feta cheese, crumbled
  • ½ cup toasted almonds
  • ½ cup toasted walnuts
  • 1 cup cherry tomatoes
  • 1 cucumber, sliced
  • ½ cup Kalamata olives
  • ½ cup roasted red peppers

For the Garnish:

  • 2 tbsp olive oil
  • 1 tsp chili flakes
  • Fresh parsley, chopped

Instructions

  1. Roast and Mash Sweet Potatoes: Preheat the oven to 200°C (400°F). Roast the sweet potatoes for 35–40 minutes until they are soft and easily pierced with a fork. Allow them to cool slightly, then scoop out the flesh and mash until smooth.
  2. Prepare the Hummus: In a food processor, combine the mashed sweet potatoes, chickpeas, tahini, olive oil, lemon juice, garlic, cumin, paprika, and salt. Blend until smooth and creamy. Gradually add 2 to 4 tablespoons of water to reach your desired consistency. Taste and adjust seasoning as needed.
  3. Toast the Pita Bread: Lightly toast the pita bread wedges in a dry pan or oven until warm and slightly crispy, to add texture to the platter.
  4. Assemble the Platter: Spread the sweet potato hummus evenly onto a large serving plate or a shallow bowl to create a base layer.
  5. Add Toppings: Sprinkle crumbled feta cheese and toasted almonds and walnuts evenly over the hummus. Arrange pita wedges, assorted crackers, cherry tomatoes, cucumber slices, Kalamata olives, and roasted red peppers around the hummus on the platter.
  6. Garnish and Serve: Drizzle olive oil over the entire platter, sprinkle with chili flakes, and garnish with freshly chopped parsley. Serve immediately and enjoy!
