Ingredients

Scale

Sweet Potatoes

  • 2 large sweet potatoes, sliced into 1/2-inch rounds
  • 3 tbsp olive oil
  • Salt and black pepper to taste

Toppings

  • 4 oz (115 g) blue cheese, crumbled
  • 1/3 cup fig jam
  • 1/4 cup shelled pistachios, roughly chopped
  • Fresh thyme or rosemary for garnish (optional)

Instructions

  1. Preheat oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper to prevent sticking and make cleanup easier.
  2. Prepare sweet potatoes: Arrange the sweet potato rounds in a single layer on the prepared baking sheet. Brush both sides of each round with olive oil and season generously with salt and black pepper to enhance their flavor.
  3. Roast sweet potatoes: Roast the sweet potato rounds in the preheated oven for 25 to 30 minutes. Flip them halfway through the cooking time to ensure even caramelization and tenderness.
  4. Add toppings: Once the sweet potatoes are tender and lightly caramelized, remove the baking sheet from the oven. Spoon a small amount of fig jam on each round, then sprinkle crumbled blue cheese over them.
  5. Melt cheese: Return the baking sheet to the oven and roast for an additional 5 to 7 minutes, just until the blue cheese softens slightly without fully melting.
  6. Garnish and serve: Remove from the oven and sprinkle chopped pistachios over the rounds. Add fresh thyme or rosemary if desired for a fragrant garnish. Serve warm as an appetizer or an elegant side dish.

Notes

  • If you prefer a milder cheese, substitute blue cheese with goat cheese or feta.
  • For a vegan option, use vegan cheese and substitute fig jam with another fruit preserve that doesn’t contain honey.
  • Roasting time may vary depending on the thickness of the sweet potato slices and your oven; adjust accordingly.
  • These rounds can be prepared ahead of time and reheated in the oven to retain crispness.
