For the Brie Bomb
- 1 wheel of Brie (around 200–250g)
- 1 sheet puff pastry, thawed
- 1 egg, for egg wash
For the Apple Pie Filling
- 1 medium apple (Honeycrisp or Granny Smith), peeled and finely diced
- 1 tbsp unsalted butter
- 1½ tbsp brown sugar
- ½ tsp cinnamon
- 1 tsp lemon juice
- Pinch of salt
- Cook the Apple Pie Filling: In a small pan, melt butter, add diced apples, brown sugar, cinnamon, lemon juice, and salt. Cook until apples are soft and caramelized. Cool.
- Prepare the Brie Bomb: Place Brie wheel in the center of puff pastry, spoon cooled apple filling on top, fold pastry around Brie, seal well, score the top, brush with egg wash.
- Bake: Bake at 200°C (400°F) for 20–25 minutes until golden.
- Serve: Let sit for 5 minutes before slicing and enjoy the molten goodness.
