For the Brie Bomb

  • 1 wheel of Brie (around 200–250g)
  • 1 sheet puff pastry, thawed
  • 1 egg, for egg wash

For the Apple Pie Filling

  • 1 medium apple (Honeycrisp or Granny Smith), peeled and finely diced
  • 1 tbsp unsalted butter
  • 1½ tbsp brown sugar
  • ½ tsp cinnamon
  • 1 tsp lemon juice
  • Pinch of salt

Instructions

  1. Cook the Apple Pie Filling: In a small pan, melt butter, add diced apples, brown sugar, cinnamon, lemon juice, and salt. Cook until apples are soft and caramelized. Cool.
  2. Prepare the Brie Bomb: Place Brie wheel in the center of puff pastry, spoon cooled apple filling on top, fold pastry around Brie, seal well, score the top, brush with egg wash.
  3. Bake: Bake at 200°C (400°F) for 20–25 minutes until golden.
  4. Serve: Let sit for 5 minutes before slicing and enjoy the molten goodness.
