Instructions

  1. Prepare the Crust: Preheat your oven to 325°F (160°C). Combine the golden Oreo crumbs, granulated sugar, and melted butter in a mixing bowl until the mixture is evenly moistened. Press this mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake the crust for 10 minutes, then remove it from the oven and let it cool completely before proceeding.
  2. Make the Strawberry Sauce: In a medium saucepan, combine the sliced strawberries, sugar, cornstarch, water, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens and becomes glossy, about 6 to 8 minutes. For added texture, gently mash some of the strawberries while cooking. Remove the sauce from the heat and allow it to cool completely.
  3. Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese until smooth and creamy. Add the granulated sugar and continue beating until well combined. Mix in the vanilla extract and lemon juice. Add the eggs one at a time, beating on low speed after each addition to prevent overmixing.
