  • 2 medium sweet potatoes, peeled and cubed 🍠
  • 1 tbsp butter
  • Salt & black pepper, to taste
  • 2 large onions, thinly sliced 🧅
  • 1 tbsp olive oil
  • 1 tsp brown sugar
  • 100 g goat cheese, crumbled
  • 1 tsp fresh thyme leaves

For the Braid

  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash) 🥚
  • 1 tsp sesame or nigella seeds (optional topping)

Instructions

  1. Make the mash: Boil sweet potatoes until tender, then mash with butter, salt, and pepper. Let cool.
  2. Caramelize the onions: Cook onions in olive oil until golden, then add brown sugar and thyme. Let cool.
  3. Prepare the filling: Mix mashed sweet potato with caramelized onions and goat cheese.
  4. Assemble the braid: Roll out puff pastry, add filling, and create a braid with the pastry.
  5. Finish & bake: Brush with egg wash, sprinkle with seeds, and bake until golden.
  6. Cool slightly, then slice: Serve warm or at room temp, perfect for any occasion.
