Ingredients

Brownie Layer:

  • 1/2 cup unsalted butter, melted

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 1/3 cup unsweetened cocoa powder

  • 1/2 cup all-purpose flour

  • 1/4 tsp salt

  • 1/4 tsp baking powder

Espresso Syrup:

  • 1/4 cup strong brewed espresso or coffee

  • 1 tbsp granulated sugar

  • 1 tbsp coffee liqueur (optional)

Mascarpone Topping:

  • 8 oz mascarpone cheese, softened

  • 4 oz cream cheese, softened

  • 1/4 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 cup whipped cream or whipped topping

Topping (Optional):

  • Unsweetened cocoa powder, for dusting

  • Dark chocolate shavings

Instructions

  1. Preheat oven and prepare pan: Preheat to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

  2. Make brownie layer: In a bowl, whisk melted butter and sugar until smooth. Add eggs and vanilla; mix well. Sift in cocoa powder, flour, salt, and baking powder; stir until just combined. Pour into pan and smooth top.

  3. Bake: Bake 20–25 minutes, until a toothpick comes out with moist crumbs. Cool completely.

  4. Make espresso syrup: In a small saucepan, heat espresso and sugar until sugar dissolves. Remove from heat, stir in liqueur (if using). Brush or drizzle syrup over cooled brownie base.

  5. Make mascarpone topping: Beat mascarpone, cream cheese, powdered sugar, and vanilla until smooth. Gently fold in whipped cream until fluffy and combined.

  6. Assemble: Spread mascarpone mixture over brownies. Smooth top.

  7. Chill: Refrigerate at least 2 hours until firm.

  8. Finish and serve: Dust with cocoa powder and garnish with chocolate shavings if desired. Slice and enjoy!
