Cake Layers:

  • 1 ½ cups all-purpose flour
  • 1 ½ teaspoons baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup buttermilk

Coffee Syrup:

  • 1 cup strong brewed coffee, cooled
  • 3 tablespoons coffee liqueur (such as Kahlúa) or Marsala wine

Mascarpone Cream:

  • 1 ½ cups heavy whipping cream, chilled
  • ¾ cup powdered sugar
  • 8 ounces mascarpone cheese, softened
  • 1 teaspoon vanilla extract

Garnish:

  • Unsweetened cocoa powder, for dusting
  • Chocolate curls or shavings (optional)

Instructions

  1. Bake the Cake: Preheat the oven to 350°F (175°C). Grease and line two 9-inch round cake pans. In a bowl, whisk together flour, baking powder, baking soda, and salt. In another bowl, cream butter and sugar until fluffy. Beat in eggs one at a time, then vanilla. Mix in dry ingredients alternately with buttermilk until smooth. Divide between pans and bake 25–30 minutes. Cool completely.
  2. Prepare the Coffee Syrup: In a small bowl, combine cooled coffee with coffee liqueur or Marsala. Set aside.
  3. Make the Mascarpone Cream: In a chilled bowl, whip the heavy cream with powdered sugar until soft peaks form. Add mascarpone and vanilla, then continue whipping until smooth and fluffy. Refrigerate until ready to use.
  4. Assemble the Cake: Slice each cake layer in half to make 4 thin layers. Place one layer on a serving plate, brush generously with coffee syrup, and spread with mascarpone cream. Repeat with the remaining layers.
  5. Frost and Garnish: Spread the remaining mascarpone cream over the outside of the cake. Dust the top generously with cocoa powder and decorate with chocolate curls if desired.
  6. Chill and Serve: Refrigerate for at least 2–3 hours (or overnight) to allow flavors to meld. Slice and enjoy this elegant Italian dessert cake.
