Ingredients

Scale

Main Ingredients

  • 1 wheel Brie (8 oz)
  • ½ cup (60g) toasted pistachios, finely ground
  • 1 tsp fresh rosemary or thyme, finely chopped
  • ¼ tsp garlic powder (optional)
  • Pinch of salt
  • Olive oil (optional, for brushing)

Accompaniments

  • Pear slices
  • Crostini
  • Figs
  • Water crackers

Instructions

  1. Toast the pistachios: Heat a dry pan over medium heat and lightly toast the pistachios for 2–3 minutes until fragrant. Remove from heat and allow them to cool. Once cool, chop the pistachios finely.
  2. Prepare the herb mixture: In a small bowl, combine the finely ground toasted pistachios with fresh rosemary or thyme, garlic powder (if using), and a pinch of salt. Mix well to evenly distribute the flavors.
  3. Apply the topping to Brie: Gently press the pistachio and herb mixture onto the surface of the Brie wheel, ensuring it adheres evenly and covers the top.
  4. Bake the Brie: Preheat the oven to 350°F (175°C). Place the Brie wheel on an oven-safe dish or baking sheet and bake for 12–15 minutes, until the cheese is soft and melty underneath the topping.
  5. Finish and serve: Optionally, brush the melted Brie and pistachio topping lightly with olive oil to add a glossy shine. Serve warm with pear slices, crostini, figs, or water crackers as accompaniments.

Notes

  • For best results, use fresh herbs such as rosemary or thyme to bring out vibrant flavors.
  • The garlic powder is optional but adds a subtle depth to the topping.
  • Serve immediately after baking to enjoy the Brie at its melty best.
  • The nuts must be toasted to enhance their flavor and crunch.
  • Olive oil brushing adds shine and a slight richness but can be omitted for a lighter option.
  • Pairing with fresh fruit and crisp crackers balances the rich cheese beautifully.
