Flatbread Base

  • 2 large flatbreads
  • 2 tbsp olive oil

Toppings

  • 1 tbsp fresh thyme leaves (optional)

Hot Honey Drizzle

  • 1/4 cup honey
  • 1/2 tsp chili flakes
  • 1/2 tsp lemon juice
  • Pinch of salt

Instructions

  1. Preheat and Prepare Flatbreads: Preheat your oven to 200°C (400°F). Brush both sides of the flatbreads lightly with olive oil to ensure a crispy texture when baked.
  2. Bake Flatbreads: Place the flatbreads directly on the oven rack or a baking sheet and bake for 8–10 minutes until they become golden and crispy.
  3. Add Toppings: Remove the crispy flatbreads from the oven. Evenly distribute the sliced Brie cheese, dried cranberries, and toasted walnuts over the top. Sprinkle with fresh thyme leaves if desired for added flavor.
  4. Melt the Brie: Return the flatbreads to the oven for another 3–5 minutes, or until the Brie cheese softens and starts to melt, creating a creamy layer.
  5. Prepare Hot Honey Drizzle: While the Brie melts, warm the honey gently in a small saucepan over low heat. Add chili flakes, lemon juice, and a pinch of salt, stirring occasionally until the flavors infuse and the mixture is smooth.
  6. Drizzle and Serve: Once the Brie is melted, remove the flatbreads from the oven. Drizzle the warm hot honey evenly over the flatbreads. Slice the flatbreads and serve immediately to enjoy them warm and crispy.

Notes

  • For a milder spice, reduce chili flakes to 1/4 tsp or omit completely.
  • Use gluten-free flatbreads if you require a gluten-free version.
  • Fresh thyme is optional but adds a lovely herbal note to the dish.
