Pineapple Cake:
- 1 cup (240 ml) pineapple juice
- 1 cup (225 g) unsalted butter, softened
- 1 ¾ cups (350 g) granulated sugar
- 4 large eggs
- 2 ½ cups (315 g) all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- 1 teaspoon vanilla extract
- Zest of 1 lemon (optional, for brightness)
Cream Cheese Frosting:
- 225 g (8 oz) cream cheese, softened
- 115 g (½ cup) unsalted butter, softened
- 2 cups (250 g) powdered sugar
- 1 teaspoon vanilla extract
- 2–3 tablespoons pineapple juice (to loosen and flavor)
Decoration:
- Thin slices of fresh pineapple (or canned rings), halved
- Optional: a pineapple wedge with rind for the top
- Prepare the Cake Layers: Preheat oven to 175°C (350°F). Grease and line three or four 8-inch (20 cm) cake pans. In a large bowl, cream the butter and sugar until light and fluffy. Beat in eggs one at a time. Add vanilla and lemon zest.
- Combine Dry Ingredients: In a separate bowl, whisk together flour, baking powder, baking soda, and salt. Alternate adding the dry ingredients and pineapple juice to the wet batter, starting and ending with flour.
- Bake the Layers: Divide batter evenly among pans. Bake for 22–28 minutes or until a toothpick comes out clean. Let cakes cool completely before frosting.
- Make the Frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and pineapple juice. Whip until creamy and slightly loose, perfect for spreading.
- Assemble & Decorate: Stack the layers with a generous amount of frosting in between each. Coat the outside thinly for a semi-naked effect, or fully cover if desired. Top with pineapple slices and crown the center with a halved pineapple wedge for drama.
