Instructions

  1. Make the cake layers: Preheat your oven to 350°F (175°C). Grease and line two 8-inch round cake pans with parchment paper to ensure the cakes come out cleanly. In a large mixing bowl, whisk together the all-purpose flour, unsweetened cocoa powder, sugar, baking powder, baking soda, and salt until well combined. Add the eggs, whole milk, vegetable oil, and vanilla extract to the dry ingredients and mix until you have a smooth batter. Carefully stir in the hot coffee or boiling water – the batter will be thin, but this is normal and helps keep the cake moist.   2. Make whipped cream filling: Using a chilled mixing bowl, beat the cold heavy whipping cream, powdered sugar, and vanilla extract on high speed until stiff peaks form.
