For the Grilled Chicken

  • 2 chicken breasts

  • Juice of ½ lemon

For the Salad Bowl

  • 3 cups chopped romaine or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, sliced
  • 1 red onion, thinly sliced
  • 1 avocado, sliced
  • ½ cup feta cheese, crumbled
  • ½ cup kalamata olives
  • ½ cup cooked quinoa or couscous (optional)

For the Tzatziki Sauce

  • 1 cup Greek yogurt
  • 1 small cucumber, grated & squeezed dry
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • 1 tbsp chopped dill
  • Salt & pepper to taste

Instructions

  1. Prepare the Chicken: In a bowl, whisk together olive oil, smoked paprika, garlic powder, dried oregano, cumin, lemon juice, salt, and black pepper to create a flavorful marinade. Coat the chicken breasts thoroughly with the marinade, then cover and refrigerate for 15 to 30 minutes to let the flavors infuse.
  2. Grill the Chicken: Heat a grill or skillet over medium-high heat. Place the marinated chicken breasts on the grill and cook for 6 to 7 minutes per side, or until the chicken is golden brown and cooked through with an internal temperature of 165°F (74°C). Once done, remove the chicken and let it rest for a few minutes before slicing into strips.
  3. Mix the Tzatziki: In a bowl, combine Greek yogurt, grated and squeezed dry cucumber, fresh lemon juice, olive oil, minced garlic, chopped dill, salt, and pepper. Stir everything together until the sauce is creamy and well blended. Chill in the refrigerator to let the flavors meld.
  4. Assemble the Bowl: In a large salad bowl, start by adding the chopped romaine or mixed greens as the base. Layer on the halved cherry tomatoes, sliced cucumber, thinly sliced red onion, avocado slices, kalamata olives, crumbled feta cheese, and cooked quinoa or couscous if using.
  5. Add Chicken & Serve: Arrange the sliced grilled chicken on top of the salad bowl. Generously drizzle the chilled tzatziki sauce over the salad or serve it on the side as a dipping sauce. Serve immediately for a delicious and wholesome meal.
