Black Bean Brownies:

  • 1 can (400g / 15 oz) black beans, drained and rinsed
  • 3 tbsp ground flaxseed + 9 tbsp water (flax egg)
  • 1/3 cup cocoa powder
  • 1/2 cup rolled oats (or oat flour)
  • 1/2 cup brown sugar or coconut sugar
  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup dairy-free chocolate chips (optional)

Instructions

  1. Prepare Flax Egg: Mix ground flaxseed and water in a small bowl. Let sit 5 minutes until gel-like.
  2. Blend Black Beans: In a blender or food processor, puree black beans until smooth.
  3. Mix Wet Ingredients: Add flax egg, maple syrup, melted coconut oil, and vanilla to the pureed beans. Blend to combine.
  4. Add Dry Ingredients: In a large bowl, mix cocoa powder, oats, sugar, baking powder, and salt. Add the wet bean mixture and stir until combined. Fold in chocolate chips if using.
  5. Bake: Preheat oven to 175°C / 350°F. Pour batter into a greased or parchment-lined 8×8 inch baking pan. Bake for 20–25 minutes, until edges are set and a toothpick comes out with moist crumbs.
