  • 1/2 cup pecans (50 g)
  • 1 tablespoon maple syrup (15 ml)
  • Pinch of salt

Instructions

  1. Prepare the Vegetables: Preheat your oven to 425°F (220°C). In a large bowl, toss the cauliflower florets and halved Brussels sprouts with olive oil, balsamic vinegar, salt, and black pepper until everything is evenly coated.
  2. Roast the Vegetables: Spread the coated vegetables in a single layer on a baking sheet. Roast in the preheated oven for 20–25 minutes, turning halfway through, until the vegetables are golden brown and tender.
  3. Toast the Maple Pecans: While the vegetables are roasting, place the pecans in a small pan over medium heat. Add the maple syrup and a pinch of salt, stirring frequently. Toast for 3–4 minutes until fragrant and coated, being careful not to burn them.
  4. Combine and Garnish: Once the vegetables are done roasting, transfer them to a serving dish. Sprinkle the toasted maple pecans over the top and garnish with fresh thyme or parsley for a burst of color and freshness. Serve warm.
