Garlic Confit
- 1 cup peeled garlic cloves
- 1 cup olive oil (enough to fully submerge garlic)

- Prepare Garlic Confit: Preheat the oven to 250°F (120°C). Place peeled garlic cloves in a small oven-safe dish and cover completely with olive oil. Add the thyme sprigs and a pinch of salt. Bake for 35–45 minutes until the garlic is soft and lightly golden. Let it cool slightly before using.
- Whip the Brie: In a food processor, combine the Brie cheese, cream cheese, and heavy cream. Blend until the mixture is smooth and fluffy. Scrape down the sides of the processor as needed to ensure an even texture.
- Assemble the Dish: Spread the whipped Brie onto a serving plate evenly. Spoon the softened garlic cloves over the top, gently mashing some of the cloves to release extra flavor. Drizzle a bit of the garlic-infused olive oil over the surface. Add dollops of fig jam and garnish with fresh thyme leaves and cracked black pepper.
