Ingredients

Crispy Base

  • 1 sheet of puff pastry (250g), thawed
  • 1 egg, for brushing
  • Pinch of flaky salt

Feta Mousse Layer

  • 150g feta
  • 2 tbsp Greek yogurt
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • Pinch of black pepper

Red Pepper Cream Layer

  • 1 roasted red bell pepper (peeled)
  • 50g mascarpone or cream cheese
  • 1 tsp smoked paprika
  • Salt, to taste

To Finish

  • Olive oil drizzle
  • Microgreens or cress
  • Cracked black pepper

Instructions

  1. Preheat oven to 200°C (390°F). Slice the puff pastry into 9 clean rectangles. Place on parchment, egg wash, sprinkle salt.
  2. Place a second tray on top to keep flat. Bake 15–18 minutes until golden brown and super crisp. Let them cool fully.
  3. Blitz the feta, yogurt, lemon juice, oil, and pepper into a smooth mousse. Chill.
  4. Blend roasted pepper with mascarpone and smoked paprika until creamy. Season lightly. Chill as well.
  5. Assemble: Lay one pastry rectangle. Pipe or spoon on feta mousse. Add a second pastry layer. Top with red pepper cream. Cap with a final pastry.
  6. Garnish with a drizzle of olive oil, microgreens, and cracked pepper. Serve immediately.
