Whipped Feta:
- 200g feta cheese
- 60g Greek yogurt or sour cream
- 1 tbsp olive oil
- 1 tsp lemon juice
- Cracked black pepper, to taste
Roasted Grapes:
- 1½ cups red seedless grapes
- 1 tsp olive oil
- Pinch of salt
Toppings:
- 3 tbsp walnut halves, toasted
- 1½ tbsp hot honey (or honey + pinch of chili flakes)
- Optional: fresh thyme leaves or chili threads
To Serve:
- Warm pita, baguette slices, or seeded crackers
- Preheat oven to 200°C (390°F). Toss grapes with olive oil and salt. Roast for 15–18 minutes until blistered and juicy.
- In a blender or food processor, whip feta, yogurt, lemon juice, olive oil, and pepper until smooth and fluffy. Chill if needed.
- Toast walnuts in a dry pan over medium heat until fragrant and lightly browned. Roughly chop if desired.
- Spoon whipped feta into a shallow bowl. Top with roasted grapes and juices. Scatter toasted walnuts.
- Drizzle generously with hot honey. Add thyme or chili flakes to finish. Serve with warm bread or crackers.
