Ingredients

Scale

Cookie Dough:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/2 cup brown sugar (lightly packed)
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 and 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup white chocolate chunks (or chips)
  • 3/4 cup fresh strawberries, diced small (blot dry with a paper towel)

Instructions

  1. Preheat the Oven: Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream Butter and Sugars: In a large bowl, cream together butter, brown sugar, and granulated sugar until light and fluffy (about 2–3 minutes).
  3. Add Egg and Vanilla: Beat in the egg and vanilla extract.
  4. Mix Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix into the wet ingredients.
  5. Combine White Chocolate and Strawberries: Fold in the white chocolate chunks, then carefully fold in the diced strawberries.
  6. Form and Bake Cookies: Scoop about 1.5 tbsp of dough per cookie onto the baking sheet. Bake for 10–12 minutes until lightly golden.
  7. Cool and Enjoy: Cool on the pan for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • Dry the strawberries well before mixing to prevent sogginess.
  • Store in an airtight container for up to 2 days — best enjoyed fresh!
  • For extra strawberry flavor, consider adding 1–2 tsp of freeze-dried strawberry powder to the dough.
